A traditional Balbacua Recipe! | Chef Tatung

It had been a while since I visited my hometown of Cebu, and I found myself missing a lot of things about it. It’s not just the activities and sights, but also the delicious food. Now that the rainy season had arrived, I decided to cook up a batch of my favorite dish, Balbacua. It wasn’t just about staying warm, it was also a way to savor the traditional flavors of home and bring back some fond memories.

Ingredients:

1 pc. Pata ng Baka
5 pcs. Ginger, sliced
2 pcs. Onion
1 Tbsp. Whole Black Pepper
Sibot & Salt

Oil, for Saute
2 Tbsp. Annatto Oil
1 pc. Onion, Minced
1 pc. Red Bell, sliced
3 pcs. Red Chili
Cooked Pata ng baka
1 Tbsp. Salted Black Beans
Add The stock
½ cup Water
2 sachet Bouillon cubes
1 small can Liver spread
1 cup Tomato sauce
3 pcs. Green chili
1 Tbsp. Fish Sauce
1 stalk Onion Leeks
Season with Black Pepper
